So-- I've been sick alot lately. Turns out I have an ear and sinus infection. Sheesh. And all of these lackluster days I've been missing the magic soup I always get when I'm sick from Pho 84 in Oakland to nurse myself back to health. Since this town is lacking, among other things, a Vietnamese restaurant, I had to boldly go where i had never been before, and improvise.
And I'm in love!
It's no pho perfection...let's not even call it pho, but this soup is doing the trick, and I can't get enough of it.
I bring you:
Christi's Sweet and Sour Phaux
1/2 Leek, sliced
1 Carrot, sliced
1 stalk celery, sliced
1 small fist-sized amount of cauliflower, sliced
2 cloves garlic, pressed
6 cups water
1 can pineapple chunks (or "tidbits" as they call them here in Sweden) + juice
1 quarter cabbage, shredded
8 button mushrooms, quartered
2 tomatoes, chopped chunky
1 tsp fresh ginger, grated
1-4 dashes of Cayenne pepper, depending on degree of desired spiciness
2 Tbs. honey
1 Tbs. sea salt
1 small bunch cilantro, chopped
Soy sauce, Bragg's liquid aminoes, black pepper, to taste
In a medium sized pot, saute leek, carrot, celery and cauliflower over high heat in a little veg. oil. When things start to get soft (about 5 min.) squeeze garlic in and saute another 2-3 min. so that you can smell the garlic but it is not burning or roasting. Add water, pineapple + juice, cayenne, soy sauce, bragg's, black pepper, ginger, honey, and salt.
Let cook over high heat another 5 min. then add cabbage and turn heat down to medium. After 8 min. throw in mushrooms and tomatoes and let simmer another 3 min. Finally add cilantro and serve it up!
Please note:
Essential to fully enjoying this dish is a side of white rice (brown just doesn't cut it for this one). I have a separate bowl for it, fill half my spoon with rice, and half with soup. YUM! Phaux delicious!
Also: It would taste more authentic without the cauliflower or carrot, I just wanted a little extra nutrients.
